Easy coconut rice pudding for dessert

Arroz con Dulce, or coconut rice pudding, is a favorite dessert all over Latin America and for us it’s also the perfect emergency dessert for when you forgot you were in charge of the dessert. This recipe from Goya uses cinnamon, clove, and fresh ginger to make this a very mouth watering recipe. Everyone will be going for seconds, so make sure you prepare enough for second rounds.

Ingredients

  • 1½  Cups GOYA® Medium Grain Rice
  • 6 GOYA® Whole Cloves
  • 1 inch piece fresh ginger, peeled
  • 1 GOYA® Cinnamon Stick
  • 1 tsp. GOYA® Salt
  • 1 can (15.5 oz.) GOYA® Cream of Coconut
  • ½ Cup raisins

 

In a bowl add rice and enough cold water to cover by 2”. Let it soak for one hour, drain and set aside. In a medium saucepan over medium-high heat, bring to boil 4 cups of water and add the cloves, ginger, cinnamon and salt. Lower heat to medium low and simmer for 10 minutes. Remove and discard spices.

Stir cream of coconut into the water and bring to boil. Add the rice and raisins. Lower heat to medium low; simmer, covered, until rice is soft and liquid is absorbed. Transfer rice pudding to large dish and transfer to refrigerator to cool.

To serve, scoop pudding onto serving plate. Garnish with fruits. No one can resist a bowl of creamy coconut pudding. Enjoy!
